The pan is covered in the same manner you'd cover rice and the pasta will absorb the water while cooking much like rice does, so no draining is necessary. When the water is mostly absorbed, the pasta will be ready. You shouldn't need to stir the orzo while it's cooking. <br /><br />You stir in the cheese and spinach after the orzo is cooked when combining the ingredients just before serving.<br /><br />Are you using the butter or oil listed in the ingredients?
