Sunday Supper

Did you know April is National Grilled Cheese month?! Not that I need a reason to enjoy one of my favorite comfort foods! Every so often I get a craving for grilled cheese that won't stop until I indulge in the crisp, buttery goodness that is this classic American sandwich. When that happens it's always good to have a collection of grilled cheese sandwich recipes on hand such as the ones the Sunday Supper Tastemakers are sharing this week.

With the addition of fried mozzarella sticks, this grilled cheese sandwich recipe is definitely an indulgence. It's not something I make on a regular basis, but when Madison came home with this idea, we had to try it. I had just made a big batch of my Slow Cooker Red Sauce, so I had the dipping sauce covered and just needed to make the mozzarella sticks and grill up the sandwiches.

Everyone declared mozzarella sticks with extra cheese between two slices of garlic Texas toast a winner and worth a try. You only live once, may as well make Life Tastes Good!

Recipe Prep Tips

  • If you are using my Slow Cooker Red Sauce for dipping, I recommend making that up the day before to enjoy for dinner with my Easy Meatballs over pasta.
  • Make the mozzarella sticks first according to the package directions.
  • While the mozzarella sticks are baking, gather the other ingredients together to have handy.
  • I use deli sliced mozzarella, but any creamy cheese will be good. Maybe try provolone if you prefer.
  • Start with room temperature ingredients. Let the cheese come to room temperature before making the sandwich. It will melt more evenly and you don't risk burning the bread waiting for the cheese to melt.
  • For this recipe, I purchased Garlic Texas Toast from the bakery. It is already buttered and ready to go, so it's super convenient and oh my goodness so delicious! If you don't have access to garlic Texas toast you can make your own by whipping up some garlic butter and spreading it all over the Texas toast in a light even layer. To make garlic butter combine 1/4 cup softened butter with a teaspoon of freshly minced garlic (or more to your liking). Season it with about 1/4 teaspoon of Italian seasoning, and a pinch of salt & pepper to taste.
  • I like to use a cast iron skillet when making grilled cheese for best results. I love the crispy outside you can only get from a cast iron skillet. Cook on medium heat. It can be trial and error getting the heat just right when making grilled cheese, so be patient and keep trying. Once you figure out the sweet spot for the temperature you'll be enjoying grilled cheese perfection.
