First responders often have to work on the holidays, so being without them on the actual holiday is something their family members just have to get used to.
Holiday Salad Recipes
Anyhoo, because Madison will be home for the first time in a few years, I am already testing new recipes to add to our traditional holiday feasts. I always like to mix our traditional recipes with new ones, and because my family would disown me if I changed out some of our more traditional recipes like our Sausage, Apple, and Cranberry Stuffing, or my Easy Homemade Cranberry Sauce and Roasted Turkey recipes, I typically find myself trying new and improved holiday salad recipes.This year I was determined to find a Brussels sprouts recipe that even I like! My husband, Don, is always bugging me to make Brussels sprouts, but I'm not a huge fan. I have eaten some fabulous Brussels sprout recipes in my day, but none that I've ever made, until now! This recipe for raw, shredded Brussels sprouts with bacon dressing will turn just about anyone into a Brussels sprouts lover! It's super easy to make the day ahead too, so that's a HUGE bonus!
Brussels Sprouts
Brussels sprouts look like little tiny cabbages. They are green and round and most kids dread the site of them on their plate. I grew up with a mom who wouldn't eat anything green (and still doesn't other than green beans), so as a kid I never had to suffer at the site of the dreaded Brussels sprouts.As an adult, the first time I tried Brussels sprouts they were roasted to perfection with a balsamic vinegar dressing, and I thought, 'where have these been all my life?!' Each time I've eaten Brussels sprouts at an event prepared by an incredible chef, I have loved them, but when I tried to make them at home it just wasn't the same. I'm still perfecting my roasted Brussels sprouts at home, but until then, I'm happy to enjoy them raw and shredded dripping in a savory bacon dressing! Turns out raw Brussels sprouts are not bitter at all! So good!!
Shredded Brussels Sprouts with Bacon Dressing
This is a very easy recipe, but I've compiled a few tips to help make it even easier.- Brussels sprouts already shredded are available in the produce section of most grocery stores. The shredded Brussels sprouts at my grocery store come in 12 ounce bags. The downside to the pre-shredded Brussels sprouts is they have the stem pieces mixed in. The stems are much more bitter and not very pleasant, so I pick through to remove them. A bit of a pain, but so is slicing up whole Brussels sprouts, so it's a trade-off.
- If you prefer to buy whole Brussels sprouts, you'll have to slice them into shreds yourself. To do that you want to thinly slice each sprout down to the stem. When you reach the stem, make a vertical cut on each side to remove it and finish slicing the small pieces left.
- This recipe gets better if it's had time to chill in the fridge before serving. I recommend making this recipe a day ahead or early in the day. It's delicious served warm, but even better served chilled, so you decide what works best for you.
- Although I love this for a holiday salad recipe, I could eat this dish anytime of year! It is a super easy recipe to make on the weekends and pack for lunch throughout the week too.

Shredded Brussels Sprouts with Bacon Dressing

Ingredients
- 12 ounces shredded Brussels sprouts
- 1 tablespoon vegetable oil
- 4 ounces thick cut Applewood Smoked Bacon, diced
- 1/3 cup Apple cider vinegar
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons dark brown sugar
- 1/4 teaspoon Cayenne pepper
- salt & pepper to taste
Instructions
- Empty 12 ounce bag of shredded Brussels sprouts into a serving bowl. Sift through the bowl to remove any pieces that have the core attached
- Heat 1 tablespoon vegetable oil in a skillet over mid-high heat. Cook 4 ounces of diced bacon pieces until browned and tender crisp. About 5 minutes. Stir in 1/3 cup apple cider vinegar, 1 tablespoon lemon juice, 2 tablespoons dark brown sugar, and 1/4 teaspoon cayenne pepper. Give it a stir and allow the mixture to boil for about 30 seconds to a minute. Taste and add salt and pepper if needed.
- Pour the bacon dressing over the shredded Brussels sprouts and toss to coat completely. Taste again and adjust the seasonings as needed.
- You may serve warm, at room temperature, or chilled. Enjoy!
