Not only is this One Pot Taco Pasta delicious for the whole family, it is made with ground beef to be budget-friendly and, by making it all in one skillet, the clean up is super easy too! It's easy to double this recipe to feed a bigger crowd and makes great leftovers! Much like my Easy Taco Pie Recipe and my Taco Rice Bowl, this recipe pretty much checks all the boxes and is sure to be your family's favorite!

Cheesy One Pot Taco Pasta Skillet Recipe

This cheesy One Pot Taco Pasta Skillet recipe is inspired by my Spicy Chicken Pasta Recipe, only I made this one with fewer ingredients and a little more budget-friendly by using ground beef instead of chicken.


Budget Friendly One Pot Taco Pasta

When developing the recipe for this One Pot Taco Pasta Skillet I really wanted to make it budget-friendly and as simple as possible, so I used a few canned and frozen ingredients, but it is still packed with flavor, and the fresh flavors come through by garnishing with a fresh herb such as cilantro.


Cooking Pasta in the same Skillet

I don't normally like to cook pasta in the same skillet as the rest of the dish, however it really worked with this recipe. It took me about 4 tries to get the liquid to pasta ratio and the timing just right, but it was totally worth it. Don was eating a lot of this cheesy taco pasta, but he said it was so good, he didn't mind at all, even when I burned it just a little. Oops!

The first try I didn't have enough liquid to cook all the pasta perfectly. The second try I added more salsa instead of water to increase the liquid thinking it would add more flavor than water and it ended up burning a little on the bottom, plus it added TOO much flavor. On the third try I added too much water and the end result was too watery.

At this point I had it pretty well figured out and the fourth try was the charm. The pasta was cooked perfectly and the flavors were spot on for our tastes. I'm excited to share this recipe with you and hope you enjoy it as much as we do. It will be a family favorite recipe whether you serve this up for a quick and easy weeknight meal or a fun Sunday Supper recipe where everyone is gathered around the table to share stories about their week. One Pot Taco Pasta Skillet Recipe Tips

  • Measure all of your ingredients before you get started. This recipe moves quickly and it makes it easier to have everything ready to go before you get started.
  • Use Certified Angus Beef® brand ground chuck for best results
  • Searing the beef adds a nice crust for more flavor. Be sure to refer to the photo tutorial below the recipe for a visual reference.
  • Use your favorite cheese for best results. I really like Sartori Chipotle Bellavitano. It adds the perfect finishing touch to this recipe. That being said, I'm not usually a fan of chipotle flavor, but the Sartori cheese is one of my faves. Other chipotle flavored cheese was a let down.

One Pot Taco Pasta Skillet
One Pot Taco Pasta Skillet is a simple meal you can cook any night of the week and the whole family will LOVE it! Loaded with all the Mexican inspired flavors of a classic taco, this cheesy One Pot Taco Pasta is comfort food goodness ready in just 30 minutes!

Ingredients

  • 1/2 pound ground chuck
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 teaspoon freshly minced garlic
  • 1/2 cup diced yellow onion
  • 15 ounce can of black beans, drained and rinsed
  • 10 ounce can of diced tomatoes with green chilies, undrained
  • 1 cup frozen corn kernels
  • 1/2 cup salsa
  • 1 cup elbow noodles
  • 1 1/2 cups water
  • 1/2 cup shredded Mexican flavored cheese
  • Freshly chopped cilantro for garnish
  • Toppings: sour cream and my Simple Guacamole Recipe

Instructions

  1. Season beef with 1/2 teaspoon kosher salt and 1/2 teaspoon freshly cracked black pepper.
  2. Heat skillet over mid-high heat and spray lightly with cooking spray. Add beef to skillet and sear one side. About 3-5 minutes. Turn beef over and break up slightly.
  3. Add 1 teaspoon freshly minced garlic and 1/2 cup sliced onions. Saute until beef is cooked through and onions are softened. About 3-5 minutes
  4. Add 15 ounce can of drained black beans, 10 ounce can of diced tomatoes with green chilies, 1 cup frozen corn kernels, 1 cup elbow noodles, & 1 1/2 cups water. Stir to combine.
  5. Bring the mixture in the skillet to a boil, cover, and reduce heat to mid-low. Simmer for 18-20 minutes until the pasta is cooked and most of the liquid is absorbed.
  6. Top with 1/2 cup shredded cheese and put the lid back on the skillet until the cheese is melted nicely. About 2-3 minutes.
  7. Garnish with freshly chopped cilantro and serve with sour cream and my homemade Simple Guacamole Recipe. Enjoy!
Yield: 4 Servings
Prep Time: 10 mins.
Cook time: 20 mins.
Total time: 30 mins.


How To Make One Pot Taco Pasta Skillet Photo Tutorial
