BBQ Pulled Pork Mac and Cheese makes a quick and easy dinner when you have leftover pulled pork! Easy, creamy HOMEMADE mac and cheese topped with leftover BBQ pulled pork is a family fave! The contrast of the creamy mac and cheese with the slightly sweet and spicy BBQ pulled pork makes for deliciousness in every forkful!


Not only is this Pulled Pork Mac and Cheese super delish, it is easy to make too. When I know I'm going to have a busy week, my go-to meal planning savior is BBQ pulled pork.

BBQ pulled pork is super easy to make in the slow cooker with just a few ingredients. It is relatively cheap to make and leftover pulled pork can be used in many different recipes. I can usually get 3-4 different dinners when I make my BBQ Slow Cooker Pulled Pork recipe.

How to Make Pulled Pork Mac and Cheese step-by-step

Using leftover slow cooker pulled pork makes quick work of this easy dinner recipe. All you have to do is cook some elbow noodles and whip up a cheese sauce.

The base for my cheese sauce is my Bechamel sauce recipe. Sounds fancy, I know, but it's easy to make and once ready, I can mix in any flavor cheese I want. I recommend a mix of Gruyere cheese and Cheddar cheese, but if you have a favorite combo for mac and cheese go with it. One of the great things about making homemade mac and cheese is you can customize it any way you like!
  1. Prepare 8 ounces elbow noodles as directed on package. Reserve about 1/4 cup of pasta liquid. Drain pasta and toss with reserved pasta liquid and 2 tablespoons butter. Salt to taste and set aside until ready to use.
  2. Melt 4 tbsp butter in cast iron skillet over mid-low heat and add 1/2 tbsp freshly minced garlic. Cook for 30 seconds to a minute until the garlic smells wonderful!
  3. Stir in 1/4 cup all-purpose flour and whisk until combined - cooking for about 5 minutes.
  4. Slowly whisk in 2 cups milk about 1/2 cup at a time, cooking and stirring about 1 minute in between each addition.
  5. Add a pinch of salt, pinch of cayenne pepper, and 1 tsp fresh thyme leaves. Bring to a simmer over low heat until the sauce thickens. Thickening of the sauce will take about 5-10 minutes.
  6. Remove from heat and stir in 1 cup shredded Gruyere and 1/2 cup cheddar cheese, stirring until cheese melts.
  7. Sauce should be thick enough to coat spoon. Give it a taste and adjust the seasonings to your liking.
  8. Pour cheese sauce over noodles and stir to coat.
  9. Top mac and cheese with reheated leftover pulled pork and enjoy!

How do you reheat pulled pork?

For this recipe, I reheat pulled pork in the microwave. It's quick and easy. Here are the steps for how to reheat pulled pork in the microwave:
  1. Put your desired amount of leftover pulled pork into a microwave safe bowl. If the pork looks a little dry, pour on a bit of BBQ sauce.
  2. Cover pulled pork loosely with a paper towel or other microwave safe cover and place bowl in the microwave.
  3. Heat on medium power until heated through to your liking.
Using the microwave is truly the easiest and quickest way to reheat leftover pulled pork.

Macaroni
  • 8 ounces elbow noodles
  • 2 tbsp butter, unsalted 
  • salt to taste
Cheese sauce
  • 4 tbsp butter, unsalted
  • 1/2 tbsp garlic, freshly minced
  • 1/4 cup all purpose flour
  • 2 cups milk - use whole milk for best results
  • 1/4 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 tsp fresh thyme leaves
  • 1 cup Gruyere cheese, shredded
  • 1/2 Cheddar cheese, shredded
