What Are Cowboy Baked Beans?

Cowboy Baked Beans are a Texas favorite. There are many variations of Cowboy Beans, but mostly they are a sweet and spicy version of baked beans with some sort of meat included. I mostly see Cowboy Baked Beans made with ground beef, but my recipe is inspired by Food Network's Cowboy Kent Rollins's recipe using pork and beans and BACON. I changed up Kent's recipe just a little bit to make it a little easier for me, 'cause I don't cook over an open fire much, but it's still the best baked beans recipe I've ever had!

I have made this Cowboy Baked Beans recipe many times for large gatherings and have always gotten rave reviews. These Cowboy Baked Beans are super easy to make and everyone is always surprised to find out they are made from canned pork and beans.

How To Make Cowboy Beans

I first had Cowboy Baked Beans during a food blogger trip with Certified Angus Beef®. I was one of the bloggers invited to tour a cattle ranch in Kansas. It was a wonderful trip full of surprises, but the best surprise was when Kent Rollins brought his chuck-wagon out into the pasture and cooked for us over hot coals. It was a beautiful setting under a white tent overlooking the expansive green pasture while the sun was setting. Definitely a once in a lifetime experience for me!

One of the recipes Kent made was his Cowboy Baked Beans recipe. The best baked beans recipe I've ever tried! Seriously, y'all! When Kent asked me how I liked dinner, I commented on the beans and he said, 'Would you believe it if I told you those are made with canned pork and beans?' I think my eyes popped out of my head at that very moment! I NEVER would have guessed that! Thankfully, Kent gifted all of us his cookbook, A Taste of Cowboy, that includes the Cowboy Beans Recipe along with many other amazing recipes. I highly recommend it!


I changed up Kent's recipe just a bit to make it a little easier

  1. Drain (2) 15 ounce cans Ranch Beans and a 28 ounce can of pork and beans
  2. Dump beans into prepared 13x9" baking dish
  3. Add 1/2 cup chopped onions, 1 tablespoon yellow mustard, 2 cups brown sugar, and 1/2 cup Sweet Baby Ray's Sweet & Spicy BBQ Sauce 
  4. Cut 6 slices of thick cut, applewood smoked bacon into 1" pieces and stir into baked beans mixture.
  5. Bake in 350°F oven for 90 minutes until thickened slightly
  6. Give it a taste and add salt and pepper as needed

Kent also made us his Vanilla Bread Pudding with Whiskey Cream sauce, which I recreated from his cookbook as well. My Version is an Apple Pie Bread Pudding with Maple Cream Sauce. It's another recipe where I always get rave reviews once everyone comes down from the nirvana cloud after enjoying it.

ingredients:


  • 30 ounces Ranch Beans (two 15 ounce cans)
  • 28 ounce pork and beans
  • 1/2 cup yellow onions, chopped 
  • 1 tbsp yellow mustard
  • 2 cups brown sugar
  • 1/2 cup BBQ sauce (I use Sweet Baby Ray's Sweet & Spicy)
  • 6 slices thick cut, Apple-wood smoked bacon cut into 1" pieces
  • Salt and Pepper to taste
