BBQ Pulled Pork Tacos

BBQ Pulled Pork Tacos make a quick and easy dinner when you have leftover pulled pork. Perfect for Taco Tuesday!

Why I LOVE Leftover Pulled Pork & You Will TOO!

There are many reasons to love pulled pork! BBQ pulled pork is super easy to make in the slow cooker with just a few ingredients, and because you use a Boston Butt Roast, you make a whole bunch of pulled pork for not a lot of cash. 

It's true! Pulled pork is relatively cheap to make and leftover pulled pork can be used in many different easy dinner recipes. I can usually make 3-4 different dinners when I make my BBQ Slow Cooker Pulled Pork recipe.

I'm not a huge fan of slow cooker recipes, but there are a few I love, and this is definitely one of my favorite slow cooker meals!

I'll slow cook a 3-4 lb Boston Butt (aka pork butt) on the weekend and mix in my favorite barbecue sauce for Slow Cooker BBQ pulled pork sandwiches. It's an easy dinner recipe when I serve with my recipe for the Best Coleslaw Ever.

Then the pulled pork leftover meat I store in the refrigerator to use throughout the week for a quick meal. It's meal planning made the easy way!

HOT TIP: A Boston Butt Roast, also known as, pork butt roast, is the preferred cut of meat over pork shoulder or pork tenderloin because it has more fat marbling for perfect fall-apart tender pulled pork.

I usually get a bone-in pork butt (Boston Butt Roast) as the bone adds even more flavor, but a boneless pork butt works fine too.

BBQ Tacos

One of those quick and easy dinners where we enjoy using leftover pulled pork is my BBQ Tacos recipe.

Using leftover pulled pork makes quick work of this family favorite BBQ tacos recipe. There's almost no meal prep! It's a must-make recipe when we have leftover pulled pork.

These BBQ tacos are so tasty! The tangy BBQ pulled pork and sweet slaw is an amazing flavor combination. It's a little bit tangy and a little bit sweet, but a WHOLE LOT DELICIOUS!

Ingredient List

  • Leftover BBQ Pulled Pork
  • Leftover Creamy Coleslaw
  • 6 Flour Tortillas, 8" (use corn tortillas if you prefer)
  • Cilantro, freshly chopped
  • Extra BBQ sauce (optional)
  • Fresh lime juice (optional)

How to Make Barbecue Pork Tacos Recipe for Taco Night

  2. Make my recipe for The BEST Coleslaw Ever (click on link in recipe card below)
  3. Pick up your favorite flour tortillas (or corn tortilla) at your favorite store and simply reheat the BBQ pulled pork. The best way (IMO) to reheat the pork is in the microwave, but you can also reheat it in a medium pot on a hot stove over low heat. I also like to heat my tortillas. Sometimes I'll go the extra mile and get my cast iron grill pan nice and hot and toast those flour tortillas until they have a nice little crisp to them. So good!
  4. Fill each tortilla with enough pork that leaves a little room for toppings, top with a nice helping of sweet slaw, and garnish with fresh cilantro and a squeeze of fresh lime juice if you like. I highly recommend the cilantro! It adds such a nice flavor that compliments the pulled pork, but if you are one of those folks who can't stand cilantro, then by all means, leave it off.
  5. All that is left to do is add any other of your favorite toppings you might like on Mexican food and enjoy your BBQ Pulled Pork Tacos! Easy peasy!

  1. Reheat leftover Slow Cooker BBQ Pulled Pork in a microwave safe large bowl until heated through. Alternately, reheat in a skillet on the stove top until heated through. If desired, mix more BBQ sauce into the BBQ Pulled Pork for a saucier texture.
  2. Warm tortillas in the microwave or in a skillet until heated through. (See recipe notes)
  3. Assemble BBQ Pulled Pork Tacos by spooning about 1/3 cup leftover meat onto a flour tortilla and top with creamy coleslaw. Salt & pepper to taste & garnish with fresh cilantro and enjoy!

Notes:

  1. When heating tortillas in the microwave, wrap tortillas in a damp paper towel or cloth and microwave for about 30 seconds.
  2. To get a slightly crisp texture, heat tortillas one or two at a time in a lightly oiled cast-iron skillet.
