Blueberry Crisp Recipe with a Secret Ingredient

WHAT IS A CRISP?

A crisp is a baked dessert of fresh fruit with a crispy crumb topping. The crumb topping is typically made with butter, flour, oats, brown sugar and spices such as cinnamon and/or nutmeg, but I've got a secret ingredient in my topping that sets this Blueberry Crisp recipe apart from all the rest. IS A CRISP THE SAME AS A CRUMBLE?

Crumbles and crisps are very similar and the names are often used interchangeably. Both crumbles and crisps are baked with fresh fruit and have a crumb topping similar to streusal, so what's the difference? The difference is in the topping. Crisps, like my Blueberry Crisp recipe, have oats that crisp up as it bakes. Crumbles, like this Traditional Apple Crumble, do not contain oats in the topping.

Crisps and crumbles are not to be confused with dump cakes. A dump cake is another very easy dessert recipe, however, it differs from crisps and crumbles in that it is more cakey. If you prefer something with a little more of a cake texture give my Blueberry Dump Cake a try.

HOW TO MAKE EASY BLUEBERRY CRISP

Blueberry Crisp is very easy to make
  1. Preheat oven to 350°F
  2. Make a simple syrup: In a saucepan set over medium heat add 1/2 cup water, 1/4 cup sugar, and 1 Tbsp cornstarch. Cook until sugar and cornstarch dissolve. The mixture will become clear and slightly thickened. Remove from heat and add 2 Tbsp fresh lemon juice and 1/2 tsp pure vanilla extract
  3. Put 4 cups blueberries in 10" cast iron skillet (photo 1)
  4. Pour simple syrup over blueberries and stir to combine (photo 2)
  5. Make crumb topping: In a large bowl, combine 1 cup all purpose flour, 3/4 cup old fashioned rolled oats, 1 cup brown sugar, 2 tsp cinnamon, and 1/2 cup mayonnaise, my secret ingredient! Mix together until a crumbly texture (photo 3)
  6. Bake at 350°F for 20-25 minutes until bubbly and the topping is nicely crisped and browned (photo 4)

BLUEBERRY CRISP TOPPING SUGGESTIONS

  1. Ice cream is my favorite topping on Blueberry Crisp. Serve the Blueberry Crisp warm topped with a scoop of cold vanilla ice cream for a refreshing dessert that's hard to resist!
  2. Whipped cream is a nice topping on blueberry crisp as it adds a cool, creamy texture that pairs nicely with this warm, crisp dessert
  3. You could go all in with ice cream and whipped topping. For an extra special treat sprinkle with some chopped nuts such as pecans

HOW TO MAKE A CRUMB TOPPING THE EASY WAY

Making a crumb topping is EASY with my secret ingredient - mayonnaise! I know what you're thinking - 'what kind of crazy do you have to be to make a dessert topping with mayo?!' But hear me out...

I prefer to use mayonnaise in place of butter when making my crumb topping for this blueberry crisp recipe because mayonnaise helps form the perfect crumb instead of getting all mushed together like can happen with melted butter.

Additionally, the added zing from the mayo combines perfectly with the sweetness of the blueberries making for a delicious flavor combo that will have your taste buds jumping for joy!

CAN I USE FROZEN BLUEBERRIES

Yes! You can use frozen blueberries right out of the freezer in this recipe. Make blueberry crisp with frozen blueberries by following the same recipe. No need to thaw the blueberries and, as a matter of fact, I recommend you don't thaw the blueberries as they will get too soft when baking.

CAN I ASSEMBLE BLUEBERRY CRISP AHEAD OF TIME?

Yes, but I recommend making the simple syrup with blueberries and storing separately from the crumb topping, which can be made ahead as well. Store the components in the refrigerator until ready to assemble and bake.

CAN I FREEZE BLUEBERRY CRISP?

Yes. If you want to make the preparation for this blueberry crisp recipe even easier, I recommend freezing the components separately as follows:
  1. Make the simple syrup as directed and combine with blueberries. Allow to cool, pour into a freezer bag, and freeze
  2. Make the crisp topping as directed, pour in a separate freezer bag, and freeze
  3. When ready to make, thaw the blueberry and simple syrup mixture, pour into skillet, and top with prepared crumb topping. Bake as directed in a 350°F oven for 20-25 minutes.

DOES BLUEBERRY CRISP NEED TO BE REFRIGERATED?

No. To store blueberry crisp, cover loosely and keep on the counter at room temperature for up to 3 days or store in refrigerator up to a week. You can also cover tightly and freeze for 2-3 months

HOW CAN I MAKE BLUEBERRIES TASTE BETTER?

If your blueberries aren't as sweet as you'd like, you can make blueberries taste better by tossing them with 1 tbsp sugar or a simple syrup as I did for this blueberry crisp recipe. Another way to add sweetness to blueberries is tossing them with a teaspoon of honey or more to your liking.

NOTES:

1. I recommend using old fashioned rolled oats. You may sub quick oats if needed. If using quick oats be aware the crumbs will be smaller and less crispy.
2. The mayonnaise I use is Blue Plate Mayonnaise. It tastes as close to homemade as I can find in my local grocery store. It’s made like homemade with oil, vinegar and only the egg yolks.
3. To store blueberry crisp, cover loosely and keep on the counter at room temperature for up to 3 days or store in refrigerator up to a week. You can also cover tightly and freeze for 2-3 months
