SLOW COOKER BEEF BRISKET MAKES MEAL PLANNING EASY

Not only is this brisket sandwich delicious, it's also an easy recipe to make using leftovers of my Beef Brisket Slow Cooker recipe. Meal planning is a breeze when you leftover beef brisket in different meals throughout the week.

We love shredded BBQ brisket over mashed potatoes, as well as in this BBQ brisket sandwich, beef brisket tacos, beef bowl recipe with BBQ brisket, and even in soup. Shredded BBQ beef brisket can be used in so many different ways! I like to slow cook the beef brisket on the weekend and plan my meals around it for the week.

This brisket sandwich, and the many recipes I make using by slow cooker beef brisket recipe, is always a favorite with my family and friends. I hope you like it as much as we do!

WHAT DO YOU PUT ON A BEEF BRISKET SANDWICH?

I like my brisket sandwich on a toasted garlic butter roll with smoky Gruyere cheese. Simple and easy! My husband likes to add a heaping spoonful of our favorite coleslaw for a topping and homemade bread and butter pickles are always a great addition!

WHAT GOES WITH BRISKET SANDWICH

Simply add your favorite potato chips for a quick side dish idea or try one of our favorites. We love to serve this brisket sandwich with baked french fries, sweet potato fries, or even honey baked butternut squash fries. If you're not in to french fries, you'd probably love one of our favorite picnic salads like our old fashioned potato salad or macaroni salad with ham and cheese, and no BBQ is complete without my always crowd pleasing cowboy baked beans! Which side will you try first?!!

HOW MUCH BRISKET PER PERSON FOR SANDWICHES

How much leftover brisket you'll need per person when making brisket sandwiches will vary depending on the appetites you are serving, but a safe bet is about 1/4 to 1/3 pound per person.

If you have 1 pound of leftover brisket, you can make 3 generous sized sandwiches for heartier appetites, but most will be able to stretch it a little further and make 4 very satisfying sandwiches especially if you are serving with a couple of the delicious side dishes I recommend above.

BBQ Brisket Sandwich

BBQ Brisket Sandwich is one our favorite leftover brisket recipes. Tangy BBQ beef brisket and smoky Gruyere cheese piled high on a grilled Vienna roll is an easy sandwich recipe your family will ask for again and again!
prep time: 5 Mcook time: 5 Mtotal time: 10 M

ingredients:

  • 1 tablespoon unsalted butter
  • 1/4 teaspoon freshly minced garlic
  • Pinch of kosher salt
  • Vienna roll, sliced in half
  • Leftover Beef Brisket in Slow Cooker (click for recipe), heated
  • 3-4 slices smoky Gruyere cheese
  • 1 small ice cube

instructions:

How to cook BBQ Brisket Sandwich

  1. In a microwave safe bowl, combine 1 tablespoon butter and 1/4 teaspoon freshly minced garlic with a pinch of kosher salt. Microwave to melt the butter.
  2. Heat a 10" skillet over mid-high heat. Spread melted garlic butter on both halves of Vienna roll. Place roll on buttered side down in the skillet and toast until golden brown.
  3. Turn roll halves over in skillet so the toasted side is up and pile the heated brisket on one half of the toasted Vienna roll. Top the beef brisket with 3-4 slices of smoky Gruyere cheese. Place other 1/2 of roll on top. Position the sandwich to the side of the skillet and place an ice cube on the other side of the skillet. Cover the skillet and cook for about 30 seconds to a minute or until the cheese is melted to your liking. NOTE: The ice cube in the skillet helps to create steam which melts the cheese nicely.

NOTES:

This recipe is a guideline for making one sandwich. Make as many as you need using this guideline and enjoy!
We love Vienna rolls for this sandwich, but soft brioche buns would be good too. Your best bet is your favorite bun, but be careful not to go too big unless you are feeding really big appetites.
