Pistachio Pudding Cookies

Pistachio Pudding Cookies make a sweet green treat with a unique flavor combination. An easy recipe to make using a box cake mix, the white chocolate and pistachio goes so perfectly together, that these cookies disappear almost as quickly as you can make them!An easy-to-make sweet green treat perfect for St. Patrick's Day!

A couple of years ago, Madison discovered cookies made with cake mixes and they won us over! When it comes to cookies, using a cake mix is an easy and quick way to make a variety of different flavors, and I love the soft texture.

I am crazy about these pistachio cookies! The nutty sweet taste is a nice change of pace for a cookie, and they are the prettiest shade of green! My favorite color!

The pistachio pudding is what gives them this beautiful green color that is perfect for celebrating St. Patrick's Day! Send these to school with the kids, take 'em to work, or just keep them all to yourself! No matter where they end up, they won't last long! Pistachio Pudding Cookies


  • 1 white cake mix
  • 1 small box instant pistachio pudding mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3/4 teaspoon almond extract
  • 1.5 cups white chocolate chips


  1. Preheat oven to 350 degrees F and line a cookie sheet with parchment paper.
  2. In a large mixing bowl combine cake mix, pudding mix, 2 eggs, 1/2 cup vegetable oil, and 3/4 teaspoon almond extract. Mix on medium speed for about 2 minutes.
  3. Add in 1.5 cups white chocolate chips and stir.
  4. Measure out 1 tablespoon dough rounds and place on cookie sheet leaving space between each one. Bake for 10-12 minutes or until lightly browned on edges.
Yield: about 30 cookies
Prep Time: 5 mins. Cook time: 12 mins.
Total time: 17 mins.

  5. How do these freeze? Should I bake first or freeze before baking?

    1. I've never tried freezing these cookies. They always disappear so quickly haha But I have frozen cookies and regularly keep balls of cookie dough in the freezer.

      It should work fine to make the cookie dough and form into rounds as the recipe directs. Then place the rounds onto a cookie tray and freeze until firm. Transfer the frozen cookie dough balls to a zip top freezer bag to save until ready to bake. Bake frozen dough balls on an ungreased baking tray placed about 2 inches apart at 350°F for 12-14 minutes. Be sure to keep an eye on the cookies and adjust the cooking time as needed.
      If baking in a convection oven try reducing the oven temp to 325F and bake 10-12 minutes.

      I'm sure you can freeze the baked cookies as well, but I prefer to freeze the dough to store in a zip top bag so I can take out only what I want to make fresh baked cookies. I hope that helps!
