Pistachio Pudding Cookies

Pistachio Pudding Cookies make a sweet green treat with a unique flavor combination. An easy recipe to make using a box cake mix, the white chocolate and pistachio goes so perfectly together, that these cookies disappear almost as quickly as you can make them!An easy-to-make sweet green treat perfect for St. Patrick's Day!

A couple of years ago, Madison discovered cookies made with cake mixes and they won us over! When it comes to cookies, using a cake mix is an easy and quick way to make a variety of different flavors, and I love the soft texture.

I am crazy about these pistachio cookies! The nutty sweet taste is a nice change of pace for a cookie, and they are the prettiest shade of green! My favorite color!

The pistachio pudding is what gives them this beautiful green color that is perfect for celebrating St. Patrick's Day! Send these to school with the kids, take 'em to work, or just keep them all to yourself! No matter where they end up, they won't last long! 5. How do these freeze? Should I bake first or freeze before baking?

    1. I've never tried freezing these cookies. They always disappear so quickly haha But I have frozen cookies and regularly keep balls of cookie dough in the freezer.

It should work fine to make the cookie dough and form into rounds as the recipe directs. Then place the rounds onto a cookie tray and freeze until firm. Transfer the frozen cookie dough balls to a zip top freezer bag to save until ready to bake. Bake frozen dough balls on an ungreased baking tray placed about 2 inches apart at 350°F for 12-14 minutes. Be sure to keep an eye on the cookies and adjust the cooking time as needed.
If baking in a convection oven try reducing the oven temp to 325F and bake 10-12 minutes.

I'm sure you can freeze the baked cookies as well, but I prefer to freeze the dough to store in a zip top bag so I can take out only what I want to make fresh baked cookies. I hope that helps!

  6. What size box of cake mix did you use? I read recently that the ounces of dry mix changed and so it affects the end result. I can say that yes it does because I made a cake mix cookie from another site and they were not good. I really want to make these but if you can clarify the ounces on the cake mix that would be awesome, thanks!

    1. Hi! Sorry for my delayed response & thank you for your question. This is a great question because, it is true cake mix boxes have gone from 18.25 ounces to 15.25 ounces. I use a 15.25 ounce cake mix when I make these cookies, so the standard size is fine. That being said, fortunately these cookies are very forgiving, so if you find a larger sized cake mix, such as 16.5 or 18.25 ounces, they will work as well. Cake mix is usually a very forgiving ingredient with which to work. I hope that helps!

    1. Hi, Sorry for the late reply. This comment slipped through the cracks somehow. I have not tried substituting chocolate chips in place of the white. If you give that a try, I'd love to know how they turn out!
