Chicken Cheddar and Guacamole Burgers

Chicken Cheddar and Guacamole Burgers | by Life Tastes Good are smothered in cheddar cheese and topped with a generous helping of guacamole for maximum delicious! #ChickenBurgers #Sandwich
Chicken Cheddar and Guacamole Burgers are da bomb y'all! Oh my yumminess these are good! But then again, I go on and on about anything with guacamole, but really these are amazing!

The chicken is seasoned perfectly with onion, garlic, jalapeno, cilantro, cumin, paprika, a little lime juice, and, of course, salt and pepper. All of those flavors play so nicely together in this juicy and tender chicken burger.

As if that is not enough, we go ahead and smother the chicken burgers with sharp cheddar cheese and then top 'em off with some Simple Guacamole and a tomato too, just for good measure. All of that is sandwiched inside a delicately toasted bun. Absolutely heavenly!

Chicken burgers get a bad rap for being dry and somewhat tasteless, but this chicken burger is breaking through all those stereotypes and proving the naysayers wrong with juicy deliciousness! Go ahead, give it a try. You can thank me later <smile>

Mexican Potato Nachos

Mexican Potato Nachos | by Life Tastes Good | Loaded Nachos made with potatoes instead of chips! #appetizer #Cincodemayo
Mexican Potato Nachos - NACHO run-of-the-mill nachos!! These are slightly healthier using thin sliced potatoes baked to a nice golden brown instead of chips.

We aren't just topping these with cheese and jalapenos, although I'm sure that would be quite tasty! We are going all out and loading these potatoes up with lots of melty cheese, taco meat, black beans, shredded lettuce, tomatoes, and of course Simple Guacamole and sour cream!

We really liked these nachos! They are full of Mexican flavor and will be making an encore presentation for Cinco De Mayo and football season too! I'm really looking forward to having this again, because I only got a tiny bit of that ginormous plate! I took some of it to my mom, and then Don ate at least half that serving in the picture!! In his defense, he had skipped lunch and was a hungry bear by the time he got home!

Grilled Cheese with Guacamole

I love guacamole with just about anything! If you missed my Simple Guacamole Recipe I posted earlier in the week, you should definitely check it out. It's easy and no fuss, and there's a great tip for keeping your guacamole fresh and green in the unlikely event you have leftovers. That doesn't happen often 'round these here parts!

But I did make up a batch to test out the tip on how to store it for up to 3 days without turning brown. So, yeah, I did it and it worked! I made this delicious grilled cheese with guacamole after the guac had been in the fridge for 3 days. You can see it is still fresh and green and bee-u-ti-ful!

This sandwich is super easy to make, of course, and it is really good! Lots of melty cheese with yummy, delicious, garlicky guacamole! This makes for a quick and easy meal that is super versatile! Pair it with chips, fries, soup, whatever you like!

Turkey and Zucchini Enchiladas with Verde Sauce

Healthy, Spicy and delicious!

This is easy to make and good for you too! Making these enchiladas with ground turkey and zucchini make these lower in fat and calories than your typical enchiladas.  You don't sacrifice flavor, either!
The sauce has a bit of a bite to it, but I love it! The new Herdez Mexican Cooking Sauces make dinner easy and they are really delicious!
This recipe was created by one of the allrecipes.com Allstars and my good friend, Renee of Renee's Kitchen Adventures. Visit her blog to read about how she went about creating this tasty dish! Herdez and allrecipes.com liked this recipe so much, they published it as part of the Herdez Collection on allrecipes.com! How exciting is that??

Check out the Turkey and Zucchini Enchilada recipe on Renee's Kitchen Adventures. I made this recipe as stated on Renee's Kitchen Adventures, except I halved the recipe and after removing the foil I put it under the broiler just until slightly browned. I served this with sour cream, cilantro, and homemade guac!

Two Quick and Easy Chicken Recipes

allrecipes.com Salsa Chicken

Last week when I got home from Savannah I found some chicken breasts in my freezer, which is rare because I don't really like to freeze meats. In an attempt to avoid going to the grocery store, because I was exhausted from the drive (and lazy), I thawed out the chicken and went to allrecipes.com for some inspiration

I was so happy with the recipes I found. The first night home I made an easy Garlic Chicken. I had everything on hand, and the recipe looked simple. No fuss is what I needed! This is a great recipe for a quick meal in a pinch! Next time boneless, skinless chicken breasts are on sale I will stock some in the freezer for those busy times - it was that easy!

Again, because I was exhausted (and lazy) from the drive, I did not get a picture of the Garlic Chicken. I did make the recipe exactly as stated, but I recommend cooking for 15-20 minutes and then checking the temp. It should be 155-160 degrees before removing from the oven. Then let rest for about 10 minutes. The 30 minute cook time in the recipe was a bit long for the chicken breasts I used. They were quite thick, so I am guessing that time is just long in general.  NOTE: Be sure your olive oil is fresh. Old oil can ruin a recipe quickly. I also like to buy a better brand of olive oil - my fave from the grocery store is the Lucini brand. Also, before breading the chicken I like to turn it over and pull it open on the bottom - there is always a part at the thickest point where you can open it up. It evens out the meat for more consistent cooking throughout

The next night I was a little more adventurous! I made some Salsa Chicken and even had enough energy to get a picture! woohoo! It was delicious too! This coming from a girl who doesn't generally like recipes made with boneless, skinless chicken. I was pleased to find another easy recipe to make in a pinch!

I made Fresh Tomato Salsa to use in the recipe, but a store bought salsa would work well. I didn't have taco seasoning mix on hand, so I made this Taco Seasoning recipe from allrecipes.com. It worked well, but when making the Salsa Chicken recipe again I would use 1/2 the taco seasoning called for in the recipe. I thought the flavor was a bit too much and so much seasoning made it a little chalky. I also used my new favorite cheese - Manchego, and it was wonderful on this recipe!
NOTE:  The Salsa Chicken recipe was even better leftover the next day! The flavors worked their mingling magic overnight in the fridge!!

I served this with allrecipes.com Black Beans & Rice. I've made this recipe many times, and it always turns out great! It has great flavor! The recipe is spot on! We really like it!

I had sour cream on hand, and I made some fresh guacamole because I LOVE it! I use an avocado with a couple gloves of garlic, a little lime juice, and some salt and pepper for the guac. Mush that up well and chill in the fridge for a couple hours. mmm mmmm good!
