Sweet and Spicy Pineapple Salsa
Sweet and Spicy Pineapple Salsa makes just about everything better! It's true y'all! There is just something about the sweet and spicy together that satisfies every craving I have all at once! Well, except for chocolate, because there is no substitute for chocolate! Right?!!
This fruity salsa goes great with some salty tortilla chips and a comfy couch <wink>, but topping fish, chicken or even pork with a sweet and spicy fruit salsa is an easy way to turn a plain dinner into a fabulous gourmet meal!
This Pineapple Salsa recipe is basically the same as my Mango Salsa, only different because it has pineapple (of course), and I left the avocado out.
Don't get me wrong, avocado would be amazing in this salsa, but I left it out because the day I was making this recipe all the avocados at the store were like concrete! Those babies needed a couple more days before they could be used in anything! My cravings could not wait a couple days, so this salsa is avocado free! Feel free to add some! You won't be disappointed either way!

Honey Glazed Spicy Chicken Thighs cook up in a flash and taste great! Seriously y'all, these have great flavor from all the delicious spices in an easy to throw together rub. The rub makes them spicy, but not TOO spicy! It has just the right amount of heat to leave you with that 'oooooooh it's spicy' feeling, instead of 'OMG! Sombody call 9-1-1!!'

Easy Grilled Chicken Thighs grill up quickly in a Grill Pan
! We're talking 10 minutes max folks! That's my kind of busy day dinner! The spice rub is spicy and delicious and works well with the grilled flavor. It's versatile too, so you can add more or less heat depending on how you like it!
I've said it before, but it is worth saying again - Chicken Thighs are where it's at!! The dark meat of the chicken thigh is much more flavorful, tender, and juicy than a chicken breast! AND they are less expensive too! Winner Winner Chicken Thigh Dinner!!
This chicken even made great leftover sandwiches. I topped some slider buns I had on hand with caramelized onions and some leftover spicy ranch dressing from my Spicy Chicken Pasta Recipe and we had yummy sandwiches with baked sweet potato fries for dinner! When in doubt add caramelized onions and you'll always have a winning sandwich!

Spicy Chicken Pasta is loaded with fresh ingredients! I mean to tell you this stuff tastes good! It's so pretty too! If it didn't taste so good, I just might be able to stare at it all day long, but truth be told, I'd rather be stuffing my face with all the fresh tasting, spicy goodness of this Mexican inspired dish! Spicy Tuna Pasta Recipe
Spicy Tuna Pasta - is really easy and makes a light meal that tastes great any night of the week! It reheats nicely too!
I've had a different work schedule for several months, and it has been a challenge trying to make the new hours fit in with our lifestyle. I tried making meals on the weekend and eating leftovers all week, which left us with a lot of...well, leftovers. I don't know what we were eating, but it wasn't the leftovers!
Clearly that wasn't the answer! Then I came up with what I thought was truly genius! I prepped something during the day and Don did the cooking while I finished up at work! He did a fantastic job! That man can cook a steak like none other, and he learned how to roast chicken breasts to perfection! I was getting spoiled, but I could tell he wasn't into it quite as much as I. What a bummer! This girl could get used to being waited on every night! It was fun...while it lasted!
