Roasted Pork Club with Scallion Mayonnaise
Roasted Pork Tenderloin, scallion mayo, bacon, spinach, avocado and cheese make a delicious sandwich. It's easy, too, when you use leftover pork. Enjoy this for lunch or dinner. It is a hearty sandwich that will satisfy anytime! No need to go to a deli when you can make sandwiches like this at home!
Ingredients (makes 2 sandwiches)
4 slices bacon
1/4 cup mayo
2 scallions, minced
salt and pepper
6 slices of your favorite sandwich bread
leftover pork tenderloin, thinly sliced
1/2 avocado, pitted, peeled and sliced thinly (coat with lime juice to prevent browning)
2 slices Creamy Havarti cheese (or your favorite)
spinach leaves, stems removed
Directions
Cook bacon until desired doneness and drain on paper towels to cool. Bacon on the crispy side works well on sandwiches. Mix mayo and scallions in a small bowl and season with salt and pepper to taste. Place bread on your work service and spread mayo on each slice. Layer two slices of bread with pork and avocado and layer 2 other slices of bread with spinach, bacon, and cheese. Stack layers and top each with one remaining slice. Enjoy!

Bacon & Cheese Omelet with Queso Blanco Sauce
THIS is a great way to start the day! It will fill you up for hours!! It is full of protein and low in carbs, so if you are cutting out the carbs for the new year, this is a great go-to meal anytime of day! If you don't want to bother with the bacon, you can easily sub in ham, which is what I usually do simply because I can be a little lazy when making breakfast...especially on a weekday!
I'm not the best omelet maker. I have no idea why my omelets are less than stellar, but they do not measure up to Madison's omelets. I've watched her and know exactly how she works, but mine are still inferior looking. They taste almost as good though, so that is what counts!
Make the queso blanco up ahead of time. I recommend making a 1/2 batch, but you won't be disappointed if you make a full batch and freeze some of it. I have it on good authority that it thaws and reheats perfectly! This stuff really does take an omelet to a whole new level. I've even made just a plain omelet and poured some queso over it - yummmmm.
Ingredients (serves 1)
1 slice of thick cut bacon (or a slice of Virginia Baked Ham)
2 large eggs
splash of milk
a couple tablespoons cheddar cheese (or your favorite cheese. I like to use a slice of American sometimes)
Directions
Heat a non-stick skillet (about 9" skillet) over mid-high heat and cook 1 slice of bacon until desired doneness. While bacon is cooking, beat 2 eggs and the splash of milk (about 1/2 tablespoon) until well mixed. Remove bacon to a plate, blot dry, and cut into pieces. Drain off fat from pan and reduce heat to medium. Pour beaten eggs into skillet, sprinkle with bacon pieces (or ham), and let sit until it starts to set. Once the sides start to cook you can push them in towards the middle and let the uncooked part drain to the edges. Keep doing this until most of the egg mixture is set. If you want to speed up this process you can cover the skillet. Meantime, get your cheese ready and heat the queso in a microwave. Once the egg is cooked, sprinkle with salt and pepper to taste, sprinkle with cheese and fold in half. Slide the omelet onto a serving plate and drizzle with queso. Enjoy!
