Strawberry Caprese Pasta Salad
This post is sponsored by the Florida Strawberry Growers Association in conjunction with a social media campaign through Sunday Supper LLC. All opinions are my own.
Strawberry Caprese Pasta Salad is a twist on the traditional Caprese Salad. Instead of tomatoes, I used sweet Florida strawberries for a refreshing change to this classic flavor combo!

Zucchini Soup Recipe
Zucchini Soup is a light, refreshing soup perfect for summer. It is simple to make in under 30 minutes, and the fresh flavor of this soup makes it a great start to any meal. Although, I have been known to pair this with a BLT for a satisfying dinner.

Kefir Pudding Parfait
This shop has been compensated by Collective Bias, Inc and its advertiser. All opinions are mine from my experience with the product. #CollectiveBias
My Kefir Pudding Parfait is a healthy pudding you can feel good about eating and serving to your family.
Don and I LOVE creamilicious snacks, but we've been eating many that aren't so good for us. In an effort to incorporate healthier sweet treats that are creamy and delicious into our diet I turned to Kefir, a fermented milk product loaded with good-for-you stuff!
At Winn Dixie I found Lifeway Kefir cultured milk smooties in a variety of different flavors. I picked up the plain in hopes I could make some vanilla pudding for a fruit parfait. I wasn't sure if the Kefir would make a thick, rich, and creamy pudding, but I'm happy to report it did!! I am so excited about this!! Don and I can now enjoy healthier creamilicious sweet treats every day!
This parfait makes a great breakfast too! Kefir is loaded with 11 grams of protein in every cup! That is sure to keep you going!!

Easy Foil Packet Fish Recipe
posted by Marion@Life Tastes Good on 2013-10-05
Tilapia with Pesto Potatoes and Peas bakes quickly in this easy foil packet recipe! This recipe is so easy you can have this on the table in under 30 minutes from start to finish!! It is so fast it will make heads spin and your family will be in awe of you!! Okay, so they probably won't even notice, but you can feel good about how fast and easy it is to put a flavorful and healthy meal on the table!
This one ranks high in my book for favorite fish recipes!! And that is saying a lot as I'm not a huge fan of fish, so I go for the very mild tasting tilapia nearly every time. I know what you're thinking... but you live in FL and you're a foodie - how can you NOT like fish? I don't understand it either, but I can tell you it is NOT for lack of trying!! That being said you don't have to stick to tilapia for this recipe! Go ahead and make this with salmon but be sure to add a couple minutes to the cook time as needed.

Ingredients
- Cooking Spray
- 4 Yukon Gold Potatoes, cleaned
- 6 teaspoons Homemade Basil Pesto
- 4 Tilapia filets
- Frozen peas
- salt and pepper to taste
- Preheat oven to 400 degrees F. and heat a saucepan of water to boiling. Enough water to cover potatoes. You can do this on a grill as well! It's a great recipe for camping!
- Slice the ends off of the potatoes and use your Food Processor
to slice the potatoes. If you don't have a food processor, just go ahead and slice them thinly.
- Salt the boiling water and blanch sliced potatoes for about 4 minutes. While potatoes are blanching, prepare 4 pieces of aluminum foil by spraying with cooking spray. Make sure the foil pieces are about 16" long.
- Drain potatoes and run under cold water. Divide the potatoes evenly on the foil pieces fanning them out in the middle of the foil (see pictures below).
- Top potatoes with 1.5 teaspoons of Homemade Basil Pesto each.
- Season your fish with salt and pepper and divide evenly on top of potatoes. Top with a handful of frozen peas.
- Bring the 2 cut sides of the foil together over the center of the fish and fold down 2 or 3 times. Fold in each side 2 or 3 times until you have a nice foil packet.
- Place foil packets on a baking tray and bake in preheated oven for 15 minutes. Carefully open the packets and serve immediately. Enjoy!

Grilled Bison Ribeye
posted by Marion@Life Tastes Good on 2013-09-26
Have you ever had a Bison Ribeye Steak? I've had grilled bison burgers before, but never any other cut until now! Bison is a healthier choice over beef as it is considerably lower in fat and calories, yet it is comparable in protein and even has more iron than beef! Check it out:
This month allrecipes.com partnered with The Bison Council, and I received a shipment of 4 bison ribeye
steaks! I was asked to give bison a chance by making a couple of different recipes. The first recipe I made was allrecipes.com Sizzling Bison Steak Stir Fry
We really enjoyed the sauce in the stir fry recipe, however I wouldn't typically use a ribeye in a stir fry. According to my hubs, a ribeye is meant to be grilled! I can't argue with that, so I used the remaining steaks to make this Grilled Bison Ribeye with Pico de Gallo

What a treat! The marinade paired nicely with the steaks and the pico added a little heat which created a nice combination of flavors! Give bison a try at your next BBQ! It's good for you!!
